With Scotland’s rich fishing industry and over 6,000 miles of coastline, seafood dishes like the haddock fish pie have become a staple in Scottish cuisine. This dish, in particular, has gained popularity not just for its delightful taste, but also for its embodiment of Scottish culinary heritage. It’s a common sight in Scottish homes, often served as a hearty main course for family meals. So, when you’re enjoying a slice of haddock fish pie, you’re not just savouring a delicious dish, but also participating in a widely cherished Scottish tradition.
What ingredients you’ll need for this easy fish pie recipe:
- Smoked haddock – fresh or frozen. If you’re using frozen, be sure to defrost these naturally beforehand. Frozen fish tends to be more convenient for meal prepping and a useful staple to keep in your freezer. It is also cheaper than fresh fish.
- New potatoes – boil them will the skin and then remove the skins before mashing.
- Butter – preferably salted.
- Milk – semi-skimmed/half-fat milk. Skimmed milk doesn’t work as well as it lacks the creaminess needed for this recipe.
- Mature cheddar cheese, grated
- Peas – garden peas are the best due to their sweetness and lovely flavour profile
- Sweetcorn – either frozen or fresh.
- Spring onion – also known as scallions
- Dijon mustard – store bought Dijon mustard
- Dried parsley
- Black pepper – finely ground ground
- Dried oregano
- Salt
How should I store fish pie leftovers?
Any leftovers that you/your family plan on eating the next day should be stored in a tightly sealed container in the top part of your fridge/refrigerator. Any portions that are to be consumed beyond the following day of the dish being made should be stored in a tightly sealed container and put in your freezer. If you’re an avid meal-prep person, this recipe is fantastic for batch freezing. It freezes well for up to 2 months. I would always recommend that you let any frozen portions to thaw naturally in the fridge the night before you plan on serving this to your family. I find that defrosting in the microwave always changes the flavour profile.

Easy, Healthy Fish Pie
Equipment
- 1 Pan
- 1 Casserole dish/oven dish
- 1 Wooden spoon/spatula
- 1 Pot
- 1 Potato masher
Materials
- 500 grams Smoked haddock – fresh or frozen
- 1 kg New potatoes
- 40 g Butter (salted)
- 500 ml Milk – semi-skimmed/half-fat milk
- 50 g Mature cheddar cheese
- 100 g Peas (frozen garden peas)
- 100 g Sweetcorn (frozen)
- 2 sprigs Spring onion/scallions
- 1½ tbsp Dijon mustard
- 2 tsp Dried parsley
- ½ tsp Black pepper
- ½ tsp Dried oregano
- ½ tsp Salt (optional)
- 1 litre Water
Instructions
- Pre-heat the oven to 220°C/200°C fan/gas mark 7.
- In a large pot, fill with water and boil your potatoes. Cook for 15 minutes until tender and then drain. Peel the skins off (they should easily slip off using your hands).
- Mash the potatoes with a potato masher and then mix in the butter, pinch of salt and Dijon mustard, thoroughly. Set aside.
- In a pan, add the fish to the milk and allow to simmer for a couple of mins on low heat and then add in black pepper, dried parsley and oregano. Cook gently for a further 2-3 minutes.
- Scoop the fish fillets out of the milk and add these to the casserole/oven dish. Use a fork to flake these in the dish and spread evenly.
- Finely dice the spring onions/scallions and add these into the pan with the milk and herbs, along with the peas and sweetcorn. Cook these for approximately 3 mins on low heat. Pour this mixture on top of the flaked fish in the casserole/oven dish.
- Add the mashed potatoes and spread evenly in the oven/casserole dish.
- Top the mashed potatoes with the mature cheddar cheese, evenly, and place this in the oven for 30 mins. Take out of the oven and allow to cool for a few mins before serving and then enjoy.
Notes
- You can substitute the smoked haddock for any other smoked fish. It is recommended that the fish is smoked to ensure that the full flavour profile of this recipe is achieved.
- Use lighter mature cheddar cheese if you want to reduce the overall calorie count.
