This is a healthy coronation chicken filling recipe as it only uses Greek yoghurt instead of mayonnaise. Coronation chicken is dish comprising of chicken mixed in with a sweet curried sauce with sultanas. Created by a chef for the coronation of Queen Elizabeth II in 1953, it is a British classic sandwich filler and a firm favourite for children and adults, alike.

Chicken in a sweet, curried, creamy sauce with bursts of sweetness. The overall sweetness comes from the mango chutney and bursts of sweetness comes from the sultanas. This recipe calls for roasted chicken instead of the standard boiled chicken, which adds a richer flavour.

Coronation Chicken – Healthy & Simple
Equipment
- 1 Baking tray
- 1 Aluminium foil or baking paper
Materials
- 2 medium Chicken breasts
- 1 tbsp Olive oil
- 1 tsp Ground black pepper
- 100 grams Greek yoghurt
- 2½ tsp Medium hot curry powder
- 2 tbsp Mango chutney
- 1 tsp Lemon juice (fresh or from a bottle)
- ½ tsp Salt
- 2 tbsp Sultanas
Instructions
- Cut up the chicken breasts into small cubes and season them with olive oil and black pepper then roast in the oven for 35 mins.
- In a plate, mix the Greek yoghurt, lemon juice, mango chutney, sultanas, salt and curry powder thoroughly.
- Add the roasted chicken to the Greek yoghurt mixture and mix.
- Add further salt to taste as needed. Enjoy!
