If you love avocados as much as I do, you will adore this avocado toast recipe. It’s vegan, hearty, and full of flavour. The creamy avocado and the fruity olive oil create a luscious texture, while the caramelized onions add a touch of sweetness and tanginess from the balsamic vinegar. The key to this recipe is to use quality bread. I suggest you look for a local bakery that makes artisan bread. Some of the best breads for avocado toast are sourdough, baguette, focaccia, olive bread, and fresh Italian bread.

Avocado Toast with Caramelized Balsamic Onions
Materials
- 2 tbsp extra virgin olive oil
- 1 medium onion, sliced
- 1 large avocado, ripe
- 1 pinch salt & pepper
- 2 slices toast – bread of your choice
- 1 tsp dried oregano
- 2½ tbsp balsamic vinegar
Instructions
- In a pan, heat the olive oil until it sizzles. To this, add your sliced onions and saute for approximately 17 mins on a medium heat. Stir regularly to ensure they don't burn. If the pan dries out, add a dash of water each time until the onions have caramelised into a beautiful golden brown.
- Add salt, pepper and the balsamic vinegar and cook for a further 2-3 mins to infuse the caramelized onions. Remove from heat.
- In a bowl, mash your avocado and add oregano and salt and pepper to taste. Then fork this onto your slices of toast. Top with your caramelized onions. Enjoy!
