Ingredients you’ll need to make creamy spinach & mushroom soup
- 250g baby spinach
- 200g chestnut mushrooms
- 1 medium brown onion
- 1 vegetable stock cube
- 6 cloves of garlic
- red chilli flakes
- unsalted butter
- olive oil
- water (if you count this at all!)
Equipment you’ll need to make creamy spinach & mushroom soup
- hand blender
- kettle
- deep pan
- wooden spoon
- soup ladle – for serving
Creamy Spinach & Mushroom Soup
Materials
- 250 grams baby spinach
- 200 grams chestnut mushrooms
- 1 medium brown onion
- 1 cube vegetable stock
- 6 cloves garlic
- 1 tsp red chilli flakes
- 20 grams unsalted butter
- 1 tbsp olive oil
- 275 ml water
Instructions
- In a pan, melt butter and then add in minced onions. Fry this for a couple of minutes.
- Add in your chopped mushrooms followed by chilli flakes and add in your olive oil. Saute this for 5 mins.
- Add in spinach and saute this until it starts to wilt.
- Add in your stock cube and water. Place the lid on the pan and simmer for 10 mins, stirring occasionally.
- Take the soup off heat and blend it using your hand held blender. If the consistency is too thick, add more water and simmer on a low heat. If it's too liquidy, place on a medium heat until some of the water evaporates.
