As we enter the colder months of the year, there’s nothing more comforting than indulging in warm healthy apple pie cookies with your family. The best thing about this recipe is that it’s nutritious compared to the traditional recipe and store bought options.
If you have apples to use up, this recipe is for you. An easy recipe for chewy, cosy oatmeal cookies with the wholesome flavour profile of apple pie. Zero refined flour or sugar. Perfect to give to your kids along with a cup of warm milk and for adults to have as a healthy dessert or snack at any time of the day. A couple of these makes for a perfect quick grab and go breakfast too.
How do you make healthy apple pie cookies?
The ingredients you’ll need for this recipe are:
- Ripe apples
- Quick cooking oats (not steel cut oats)
- Wholemeal flour – you can use all purpose flour if you prefer
- Maple syrup
- Vanilla extract
- Ground cinnamon
- Ground nutmeg – this is optional but I highly recommend it as this gives your cookies that lovely warm winter spice flavour profile
- Low fat milk
- Unsalted butter
- Salt
- Egg
- Baking powder
Equipment you’ll need:
- Pan – to melt your butter
- Mixing bowl
- Spoon
- Baking tray
- Parchment paper
- Kitchen scales
It’s so important to have kitchen scales to hand for this recipe. Having the wrong measurements of wholemeal flour and oats will leave your cookies cakey, crumbly or a bit stodgy like bread.
How long will these cookies last?
If you’re lucky enough to make these last longer than a day then you’ll be happy to know that you can store any spare cookies in an airtight container in your refrigerator for up to a week. These also freeze well and for up to 1 month.
Healthy Apple Pie Cookies
Materials
- 2 medium ripe apples – finely diced
- 1 cup (100g) quick cooking oats
- ¾ cup (90g) wholemeal flour
- ¼ cup (60 ml) maple syrup
- 1 medium egg
- 21 g unsalted butter
- 75 ml milk – low fat
- 2½ tsp ground cinnamon
- 2 tsp vanilla extract
- 2½ tsp ground nutmeg (optional)
- ½ tsp salt
- 1½ tsp baking powder
Instructions
- In a bowl, whisk together: oats, flour, baking powder, cinnamon, nutmeg and salt.
- In a pan, melt the butter and then add this to another bowl. To this, whisk in the egg, maple syrup, milk and vanilla extract. Then add this mixture to the bowl in step one. Mix until fully incorporated.
- Add in your finely diced apple and slowly fold this into your mixture.
- Cover the bowl and place this in your refrigerator for 30 mins to chill.
- Preheat your oven to gas mark 5, line a baking pan with parchment paper.
- Using a spoon and your hands, scoop out approximately 10 balls and place these onto the parchment paper lined baking pan. Flatten each of these on the pan to your desired thickness and width either using your hands or a spatula. The thinner they are, the quicker they'll bake. Bake for 15 mins.
- Remove from the oven and allow the cookies to cool for 10 mins. Then enjoy!
