Looking for a simple, healthy refreshing smoothie to boost your family’s immune system? This is just the recipe for you. It’s a sweet and tangy thirst quencher with a mild warm kick from the ginger. Definitely minder than those ginger shots you find in the supermarkets. What’s even better is that you get 2 of your 5 a day of fruit and vegetables from this smoothie alone.
What are the ingredients in this smoothie?
This recipe requires just 5 ingredients. These are:
Pineapple is renowned for several health benefits. It is loaded with vitamin C along with many other nutrients, contains disease fighting antioxidants, helps to aid digestion, may help reduce the risk of cancer according to many scientific studies, reduce inflammation and may help with post exercise recovery. The recipe below requires frozen pineapple. You can use fresh pineapple but the frozen variety gives the smoothie a cool slush consistency without the need for including ice.
Cucumber is incredibly hydrating. As cucumbers are predominantly water, they are low in calories but pack in a lot of nutrients. Consuming cucumbers with their skin may lead to many potential health benefits, including possible weight loss, improved hydration, a better digestive track and lower blood sugar levels.
Lemon juice is chockfull of antioxidants and immune boosters and is known for its alkalizing effects and detoxifying properties.
Ground ginger has many antioxidants and is a nutrient powerhouse. It may help drastically lower blood sugar levels and improve heart health. You can use fresh ginger but I find that too overpowering for this smoothie. Also, most people tend to have ground ginger in their pantry/kitchen.
Water – we all need to try and drink at least 2 litres of water a day. This is a great way to add to that (not to mention the liquid from some of the above ingredients).
What equipment do I need for this smoothie?
You’ll need a blender for this recipe. I invested in this Magimix blender * more than 7 years ago and use it regularly for a variety of recipes. It also looks extremely sleek and stylish in any kitchen (I’m a sucker for nice looking, functional kitchen equipment!). So I would highly recommend purchasing one of these. However, one of my family members has this blender * and they swear by how good it is. Theirs is more cost effective, so if you’re not prepared to make a kitchen investment, go for the second option!

Refreshing Pineapple and Cucumber Smoothie
Equipment
- 1 Blender or smoothie maker
- 2 Glasses/cups
Materials
- 2 cups Water
- 100 grams Frozen pineapple
- ½ small Cucumber
- 2 tbsp Lemon juice (bottled or fresh)
- 2 tsp Ground ginger
Instructions
- Place all the ingredients in a blender and mix until fully blended. Serve and enjoy!
Notes
- If you only have fresh pineapple to hand, cut these into small chunks and pop them into your freezer for 2 hours beforehand.
- This recipe lasts for up to 1 day in the fridge. You could freeze this but given how easy it is to make, we recommend making this fresh every time you want to consume this smoothie.
