Summer Superfood Salad
Equipment
- 1 Large salad bowl
- 1 Salad tongs
Materials
- ½ small Pomegranate
- 75 grams Feta cheese
- ½ head Lettuce
- 1 bag Mixed salad leaves (supermarket packet)
- ½ medium Cucumber
- 16 small Cherry tomatoes
- 1 tbsp Olive oil
- 2 tbsp Lemon juice (fresh or from a bottle)
- 2 tsp Black pepper
Instructions
- Quarter the cherry tomatoes and cut the cucumbers into thin slices and half them.
- Put all the salad, lettuce, tomatoes, cucumbers into the salad bowl, drizzle the olive oil, lemon juice and sprinkle the black pepper over this then mix thoroughly until everything is evenly coated.
- Add the feta cheese and pomegranate seeds (peel these if required first) then mix once more. Serve up with your salad tongs and enjoy!
Notes
- You can add other herbs and spices if you like, however the feta cheese, lemon juice, black pepper and pomegranate seeds really shine so nothing further is really needed.
