Easy, Healthier KFC Burger

One of my favourite "fake-aways". This recipe is a winner for children and adults as it's a delicious, easier, healthier spin on a KFC burger. Better for your waistline, body and purse.

Equipment

  • 1 Baking tray
  • 1 Aluminium foil
  • 1 Wide bowls/plates
  • 1 Knife

Ingredients
  

Base ingredients

  • 4 small Chicken breasts
  • 3 cups Cornflakes
  • 1 medium Egg
  • 1.5 cups Lettuce (shredded)
  • 4 medium Wholemeal buns
  • 4 tbsp Light mayonnaise

Dried herbs & spices

  • 2 tsp Garlic
  • 2 tsp Ginger
  • 2 tsp Oregano
  • 2 tsp Smoked paprika
  • 1 tsp Ground chilli
  • 1 tsp Thyme
  • 1 tsp Salt
  • 1 tsp Black pepper

Instructions
 

  • Preheat your oven to 200°C/180°C(fan)/400°F/Gas 6
  • Set up your baking tray with the aluminium foil
  • Put the Cornflakes in a wide bowl and coarsely crush these with your fingers
  • Add all the herbs and spices to the crushed Cornflakes (Cornflake mix)
  • In another bowl, crack your egg and whisk
  • Take each chicken breast and dip it into the egg mixture, ensuring it's fully coated
  • Then take the coated chicken breasts and dip these into the Cornflake mix, covering both sides so that there are no visible gaps
  • Place each coated chicken breast on the baking tray and place in the oven for approximately 30-40 mins, depending on how thick the chicken breasts are
  • Once the chicken breasts are cooked, cut open your wholemeal buns and place inside lettuce, one chicken breast and top this with your light mayonnaise.

Notes

  1. When coating the chicken, use one hand for putting the chicken in the Cornflake mix and then putting it in and out of the egg mixture and then another hand for tossing it in Cornflake mix. This is to make sure the Cornflake hand doesn't get covered in egg and clumps of Cornflakes. You can also use tongs to prevent messy fingers.
  2. To make the chicken extra tender, soak it in buttermilk overnight. Then when you are ready to make it, discard the buttermilk and follow the rest of the recipe.
  3. If you're feeling extra indulgent, add a slice of cheese to each burger.
