Speedy Matcha & White Chocolate Brownies

An easy, delicious speedy matcha and white chocolate brownies. This is lower in sugar compared to other similar recipes, but even tastier!

Equipment

  • 1 Mixing bowl
  • 1 Sieve
  • 1 Spatula
  • 1 8 inch square baking pan
  • 1 Weighing scales
  • 1 Baking paper
  • 1 Cooking pan
  • 1 Cooling wire rack

Ingredients
  

  • 125 grams All purpose flour
  • 100 grams Unsalted butter
  • 90 grams White chocolate
  • 75 grams Granulated sugar
  • tbsp Matcha powder
  • 2 small Eggs (room temperature)
  • 2 tsp Vanilla extract
  • ½ tsp Salt (preferably Himalayan salt)

Instructions
 

  • Preheat the oven to 180 degrees Celsius/gas mark 4.
  • Grease an 8×8 baking pan with butter and line with baking paper and set this aside.
  • In your cooking pan, on a gas/electric hob, melt the butter on a high heat. Turn down the heat to low and cook and stir the butter until it small bits appear at the bottom of the pan. Remove from heat.
  • Chop up the white chocolate and add half of this to the melted butter then add the matcha powder. The heat from the butter should melt the chocolate. If it doesn't return the pan to a low heat the gas/electric hob until it does. Set aside.
  • In a mixing bowl, add the sugar, eggs, vanilla extract and salt then combine by hand or an electric mixer until it becomes creamy. Mix in the matcha chocolate from step 4 until it becomes a green batter.
  • Sift the flour into the green batter using a sieve. Gently fold the flour into the batter using a spatula.
  • Add the remaining chopped chocolate into the batter and gently fold this in until it's evenly distributed in the batter.
  • Spoon this batter into the lined baking pan and bake for 20-25 mins.
  • Taking this out of the oven, slam the tray on the counter to get rid of some of the trapped air then pop this back in the oven. Bake for another 10 mins.
  • Take out the baking pan and remove the cooked brownie and place onto a wire rack. Let this cool down.
  • Cut into 9 even squares and serve.
