Coronation Chicken - Healthy & Simple
This is a simple delicious British classic sandwich filler with a healthier spin.

- 2 medium Chicken breasts
- 1 tbsp Olive oil
- 1 tsp Ground black pepper
- 100 grams Greek yoghurt
- 2½ tsp Medium hot curry powder
- 2 tbsp Mango chutney
- 1 tsp Lemon juice (fresh or from a bottle)
- ½ tsp Salt
- 2 tbsp Sultanas
Cut up the chicken breasts into small cubes and season them with olive oil and black pepper then roast in the oven for 35 mins.
In a plate, mix the Greek yoghurt, lemon juice, mango chutney, sultanas, salt and curry powder thoroughly.
Add the roasted chicken to the Greek yoghurt mixture and mix.
Add further salt to taste as needed. Enjoy!
