Coronation Chicken - Healthy & Simple

This is a simple delicious British classic sandwich filler with a healthier spin.

Equipment

  • 1 Baking tray
  • 1 Aluminium foil or baking paper

Ingredients
  

  • 2 medium Chicken breasts
  • 1 tbsp Olive oil
  • 1 tsp Ground black pepper
  • 100 grams Greek yoghurt
  • tsp Medium hot curry powder
  • 2 tbsp Mango chutney
  • 1 tsp Lemon juice (fresh or from a bottle)
  • ½ tsp Salt
  • 2 tbsp Sultanas

Instructions
 

  • Cut up the chicken breasts into small cubes and season them with olive oil and black pepper then roast in the oven for 35 mins.
  • In a plate, mix the Greek yoghurt, lemon juice, mango chutney, sultanas, salt and curry powder thoroughly.
  • Add the roasted chicken to the Greek yoghurt mixture and mix.
  • Add further salt to taste as needed. Enjoy!
