Healthy Apple Pie Cookies

Ingredients
  

  • 2 medium ripe apples - finely diced
  • 1 cup (100g) quick cooking oats
  • ¾ cup (90g) wholemeal flour
  • ¼ cup (60 ml) maple syrup
  • 1 medium egg
  • 21 g unsalted butter
  • 75 ml milk - low fat
  • tsp ground cinnamon
  • 2 tsp vanilla extract
  • tsp ground nutmeg (optional)
  • ½ tsp salt
  • tsp baking powder

Instructions
 

  • In a bowl, whisk together: oats, flour, baking powder, cinnamon, nutmeg and salt.
  • In a pan, melt the butter and then add this to another bowl. To this, whisk in the egg, maple syrup, milk and vanilla extract. Then add this mixture to the bowl in step one. Mix until fully incorporated.
  • Add in your finely diced apple and slowly fold this into your mixture.
  • Cover the bowl and place this in your refrigerator for 30 mins to chill.
  • Preheat your oven to gas mark 5, line a baking pan with parchment paper.
  • Using a spoon and your hands, scoop out approximately 10 balls and place these onto the parchment paper lined baking pan. Flatten each of these on the pan to your desired thickness and width either using your hands or a spatula. The thinner they are, the quicker they'll bake. Bake for 15 mins.
  • Remove from the oven and allow the cookies to cool for 10 mins. Then enjoy!
