In a pan, melt butter and then add in minced onions. Fry this for a couple of minutes.
Add in your chopped mushrooms followed by chilli flakes and add in your olive oil. Saute this for 5 mins.
Add in spinach and saute this until it starts to wilt.
Add in your stock cube and water. Place the lid on the pan and simmer for 10 mins, stirring occasionally.
Take the soup off heat and blend it using your hand held blender. If the consistency is too thick, add more water and simmer on a low heat. If it's too liquidy, place on a medium heat until some of the water evaporates.
Ladle a portion of your preference in a soup bowl using your soup ladle and enjoy!
